Garlic Herbed Mashed Potatoes in the Instant Pot

Serves 6

ingredients

  • 2 pounds Yukon gold or white potatoes, unpeeled and cubed
  • 1 cup vegetable stock or broth
  • 3 cloves garlic
  • 1 teaspoon of Herbes de Provence or 3 teaspoons fresh herbs, rosemary, thyme and sage
  • Salt-free seasoning and black pepper to taste

Preparation

1. Add the potatoes, vegetable stock and garlic to the instant pot and close the lid.

2. Set the timer to cook for 4 minutes at normal pressure with quick pressure release (QPR).

3. Open the lid, add the herbs to the pot and mash the potatoes to your desired consistency.

4. Adjust the seasoning and serve or let the potatoes cool and store in the refrigerator in an airtight container for up to 4 days.
